For us Singaporeans, it isn’t really Chinese New Year until you’ve taken part in one too many lo heis. After all, yusheng is an essential festive dish during this time of the year. That said, the dish has definitely changed with the times. In recent years, we’ve seen some of the best yusheng with unusual standouts – think uni, pufferfish or scallops. Some even forgo meat altogether!

1. Crystal Jade

Look to Crystal Jade for something different. The Chinese restaurant is offering their Season of Wealth Golden Scallop Yusheng (from S$108++), which includes fresh vegetables, fruits, as well as house-made pickled vegetables. This yusheng dish boasts fun, new flavours with a pleasing bite.

Toss to a brighter year with ingredients such as red dragonfruit, watermelon cubes, pomelo, burdock, quinoa, cherry tomatoes, pickled cucumbers, crispy rice and walnuts, along with deep fried yam strips and Hsin Chu beehoon. This is topped with briny pops of ikura and sweet scallop slices. Even the dressing is special: an olive oil-based sauce with flower blossom syrup and plum sauce.

2. Jade

Start your auspicious feasting with the spectacular Premium Gold Rush Salmon Yu Sheng (from S$78++). It is artfully arranged into an image of a bull, while families with younger children will delight in the special children’s version which is arranged into a playful calf.

Champagne jelly, shallot oil and kumquat dressing elevates the dish, striking a captivating balance of rich and refreshing. The yusheng also comes with elegant Chinese calligraphy written by Chef Leong himself!

3. Rumours

Missing Balinese food? The beach club at Siloso Beach is bringing a Balinese twist to the classic yusheng. The Jimbaran Grill Yu Sheng (S$98.80) features lobster tail with sambal merah, grilled squid with kecap manis, and jumbo river prawns with sambal merah. This is served alongside fresh carrots and white radish. Even the traditional plum dressing gets dressed up with Indonesian spices!

4. Peach Garden

Peach Garden is a household name in Singapore and they are bringing the most extra and OTT yusheng this year. The “Heng Heng” Million Dollar Yu Sheng (from S$168++) is a large golden dome encasing a bed of yusheng ingredients. Expect only the most premium of toppings: lobster, baby abalone, Wagyu beef, and salmon.

5. Blue Jasmine

Blue Jasmine opens the way for good fortune with the Thai Chin Yu Sheng (S$68++) that comes with a Thai twist. The dish features silky slices smoked salmon served with a tall mountain of crispy rice crackers, vegetables and fruits including Thai green mango, papaya, pomelo and pickles. Of course, who can miss out the sauce – a unique and refreshing combination of plum and passionfruit.

6. Dancing Crab

Put away your chopsticks because the Dancing Yusheng (from $48++) is back! Comprising succulent Alaskan King Crab legs, smoked salmon slices, fried fish skin and assorted greens, this decadent dish is drizzled with a healthy homemade honey mustard sauce and topped with olive oil.

7. Man Fu Yuan

Usher in a Niu year as Man Fu Yuan celebrates with a luxurious selection of dishes. 8. Xin Cuisine Chinese Restaurant

Salted egg fans can toss to a prosperous new year with Xin Restaurant’s rendition of the dish – Alaskan Crab with Salted Egg Yolk Sauce Yu Sheng (from S$98++). Oozing with sweetness and umami from fresh Alaskan crab meat, the creamy salted egg yolk sauce brings that extra oomph!

9. Auntie’s Wok and Steam

Set aside some calorie space for CNY snacking by partaking in a guilt-free yusheng. The Andaz Healthy Yusheng (S$68++) is packed full of superfoods such as kale, beetroot, green apples, flaxseeds and chia seeds. 10. Hai Tien Lo

Tuck into the chef recommendation, Blossoming Treasures Yu Sheng (from S$168++). A decadent and indulgent platter that comes with gold and silver flakes, lobster, scallops, black caviar and shredded vegetables with passionfruit sauce.

Signifying flourishing wealth and prosperity, the raw vegetables artfully form the shape of two bull horns, traditional symbols of wealth in Chinese culture. 12. Cherry Garden

Invite in a new auspicious beginning with loved ones as you savour specially-curated dishes at Mandarin Oriental’s Cherry Garden. There’s a yusheng for everyone, such as the Triumph Yu Sheng that features premium ingredients such as black truffle and caviar, or the classic Prosperity Yu Sheng (from S$88) with salmon slices.

15. Syun

Tradition gets a facelift with Syun’s Special Yu Sheng (S$118++), a combination of fresh greens and sprouts topped with fried kataifi pastry and served with a special sesame-ponzu sauce. The highlight of this dish? The A4 Kagoshima wagyu that takes the place of the regular salmon. The wagyu is sous vide to a medium-rare, then torched and sliced thinly.
